Last week I didn’t get to post. I was at my other job (sub teacher at in home preschool.) So I’m back this week and here is the third casserole in the series of on-the-go Breakfasts. This recipe has only 7 simple ingredients, most of them you probably have in your kitchen already. These meals are also great for dinner just, add some rice and a salad and you will have a meal done in less than an hour.

 

 Supply Used in the Breakfast Casserole:

  • Eggs
  • Flour
  • Salt
  • Milk
  • Sharp Cheddar Cheese
  • Broccoli

 

Preheat the oven to 350°

Grease a 8.1″ Square  pan (2 quarts) with butter

 In a small sauce pan bring the water to a boil, then add the fresh chopped broccoli (works with frozen broccoli also).

Cover it and turn down the heat — cook for 7 minutes. Drain well and add the salt. Once the broccoli has cooled a little( about 5 minutes), I recommend chopping the broccoli more for a more consistent texture. Set aside

Beat the eggs with a wire whisk, add the flour, salt and mix well.

Next slowly mix in the milk.

Add the chopped broccoli and  sharp cheddar cheese

Mix until well combined.

Bake for 45 minutes or until edges are brown.  You can test to see if the Breakfast Casserole is done by lightly shaking it.  If it seems firm all you need is to check the middle to make sure it’s also well formed.  If the mixture jiggles you need to cook it longer. This recipe makes 9 servings.

Broccoli Cheese Casserole Only 7 ingredients, Easy to make taste so good. Make the night before for a quick breakfast in the morning. Warms up in no time.
Ingredients
  • 2 cups cut up Broccoli
  • ½ teaspoon Salt
  • 2 Eggs
  • ½ cup Flour
  • 1 teaspoon Salt
  • 2 cups of Milk
  • 2¼ cups Shape Cheddar Cheese
Instructions

  5. Let the broccoli cool a little( about 5 minutes),
  6. Chop the broccoli more. Set aside
