Just in time for Valentina’s Day! For me, I am a Big fan of cheesecake so I think any time is a good time for these Creamy Cheesecake Cupcakes.  And there so easy to make!

Back when my husband and I were dating I made these tasty cupcakes for him.  I know they must have left a good taste in his mouth because 2 days later on Valentines Day he proposed to me.  I ‘m not guaranteeing a proposal, but these sure do make an impression.  😉

For this post, I have two Tasty Tips right at the beginning, so let’s get going

  • Tip 1, Add water to a baking safe pan
  • Place the pan with the water in the oven while it’s preheating
  • Tip 2, If the cream cheese is still too cold, place in a bowl of warm water for 10 minutes (whatever warm water that comes out your tap is fine)

What does the first tip do?

  • It creates a ‘sauna’ for the cheesecake making sure it doesn’t crack or come out dry
  • The cheesecake will come out looking plump and moist
  • I recommend using this tip for all your cheesecake recipes!

Pre-heat the oven to 350° (don’t forget to add your pan of water)

Get your muffin tin ready with cupcake liners

Place graham crackers in a food processor and pulse until you get fine crumbs

Mix graham crackers and butter then blend with a fork

Blend cream cheese in a medium-size bowl. Mix until cheese is soft and creamy. Add eggs, sugar, and mix until thoroughly combined.

Mix in vanilla for 3 to 5 minutes until creamy and soft.

Add 1 tablespoon of graham cracker mix in the cupcake liner. Press mixture firmly with the tips of fingers, until firm and level.

Add 2 heaping tablespoons of cheesecake batter in cupcake liners.  Place the cupcakes in the oven and Bake for 18 minutes or until the cheesecake batter is set. When I say ‘set’ I mean you don’t want to see any jiggle when you shake the pan.

Once out of the oven let cool on a wired rack. Easy Cheesecake Cupcakes

As the cheesecakes are cooling down. Core and slice the strawberries for garnish.

I like to chill the Easy Cheesecake Cupcakes before severing.  This helps to bring out the flavor and firm them up.

Easy Creamy Cheesecake Cupcakes. These are so very simple to make and I include my "Tasty Tip" for these Easy Cheesecake Cupcakes that makes them Creamy!
Ingredients
  • For the Graham Cracker Crust
  • 1 cup Graham Crackers (9 Crackers)
  • 4 Tablespoons Butter
  • Cheesecake Filling
  • 2 (8-ounce) Cream Cheese, softened
  • ½ Cup Sugar
  • 2 Eggs
  • 1 teaspoons Vanilla Extract
  • Fresh Strawberries
Instructions
  1. Pre-Heat oven to 350°

    These look great! I’ll have to make these sometime soon! I love small cheesecake recipes because I always tend to mess up a big cheesecake!

      I completely agree with you. Those big cheesecakes can be overwhelming.
