Easy No-knead Breakfast Cinnamon Rolls

Nothing ls better on a cool crisp autumn morning then baking cinnamon’s rolls.  Even if you live in an area of the country where the changing of seasons is recognized by the need to possibly put tennis shoes instead of flip-flops and a wet-suits instead of a bathing suit, there is still something magical about cinnamon and sugar.

This is one of my favorite dough recipes and I get really excited talking about it!  I know, you can say it’s just a cinnamon rolls recipe, but I really love how easy it is to make.  You don’t have to knead the dough and you make it the night before.  Plus, in the morning you can be guaranteed smiling faces and full tummies!
This is a great recipe for your holiday parties. Let start the step-by-step Easy No-knead Breakfast Cinnamon Rolls

Now, add the water, sugar, salt, butter  mixture with the yeast and eggs

Add 2 cups of flour: Beat until smooth

Add enough remaining flour to form a soft dough (do not knead)

At this point, you have an option:

You can either make the recipe all cinnamon rolls or

Split your dough and make half cinnamon and half without cinnamon for those who prefer it without (like my Mom) recipe provided below

If you want all cinnamon rolls you’ll need to double the filling recipe

In a small bowl combine melted butter, light brown sugar, cinnamon, and pecans: Mix until combined

Split the dough in half (for ease) and roll out into a large rectangle

Spread filling evenly on top of your dough (it will seem like too little but it will do the job)

Time to roll it up like a sushi chef

Cut your roll into thick slices

Place in buttered baking dish

Cover and place in fridge until morning

Good morning!
Time to remove your creation from the fridge and let sit for about 30 min
Don’t forget to preheat your oven to 350°
You’re on the final stretch!
Cook your buns for 35 — 40 min or until golden brown and you just can’t wait any longer
While your waiting, time to make your glaze (if you want your glaze to be winter white omit the vanilla)
Pull them out of the oven and enjoy the smell of fresh baked goodies while they cool slightly
Be prepared to bat away husband hands for they seem to forget the definition of HOT when these come out of the oven.

Easy make no-knead Breakfast Cinnamon Rolls

Ingredients
  • 2 pk (1/4 ounce each active dry yeast
  • 1 cup warm water (110° to 115° For the yeast)
  • 1 cup boiling water ( for the butter)
  • 1 cup of butter
  • ¼ cup sugar
  • 1 teaspoon salt
  • 7-1/2 to 8 cups all-purpose flour
  • Cinnamon Filling
  • ½ cup melted butter
  • ¾ cup of light brown sugar
  • 2 Tablespoons ground cinnamon
  • ¾ cup pecans
  • Glaze
  • 4 Tablespoons butter
  • 1½ cup of powder sugar
  • 1 teaspoon vanilla extract
  • 3 to 6 Tablespoons hot water
Instructions
  1. Butter two 8 x 8 glass baking dishes
  2. Put yeast in warm water and let it sit for about 5 minutes
  3. In a bowl Combine boiling water, salt, sugar and chopped butter
  4. In a separate large bowl, mix yeast and eggs thoroughly
  5. Combine water, sugar, salt, butter mixture with the yeast and eggs
  6. Add 2 cups of flour - Mix until smooth
  7. Add enough remaining flour to form a soft dough (do not knead)
  8. At this point, you have an option:

  10. Split your dough and make half cinnamon and half without cinnamon for those who prefer it without
  11. If you want all cinnamon rolls you'll need to double the filling recipe I give

  15. Roll up dough and cut into 6 slices
  16. Place in buttered baking dish
  17. Cover and place in fridge until morning
  18. Preheat oven to 350°
  19. After overnight refrigeration, pull out and let sit, at room temperature, for 30 min
  20. Bake for 30-40 min. or until golden brown
  21. Glaze (Omit the vanilla from the recipe for a whiter color)
  22. Mix butter, powdered sugar, and vanilla
  23. Add the hot water 1 Tablespoon at a time until glaze reaches desired consistency
  24. Spread over slightly cooled rolls
