A perfect salad for the warm weather to come. Great for potlucks and picnics. This salad can be served warm or cold. I use the pasta salad as one of my vegetarian weekly lunch meal planning meals. I will pack it in my husband lunch.

For the Vinaigrette, mix the olive oil, balsamic vinegar, dijon muster, honey, and salt.

Pasta Salad Recipe

In a medium size stock pot, add water and bring to a boil. Once the water is boiling place in the pasta olive oil, and salt. Cook for 12 minutes or how long the pasta directions say.

in a separate larger, sauce pan add olive oil. Once the oil is warm place in the onion and zucchini cook for about 12 minutes.

move the zucchini and onions to one side of the pan and add the mushrooms to the other side and cook for 5 more minutes

then add the crushed garlic and dried oregano cook for 1 more minute

sprinkle on the parmesan cheese let for a few minutes.

Remove the vegies from the pan. Place in a large bowl and set aside. Add the tomatoes to the pan and cook for 2 minutes. Strain the pasta and add to the large bowl with the veggies.

Add the fresh basil and the vinaigrette and time to mix, mix toss, toss!!

My favorite way to sever the salad recipe is to add some feta cheese and sided avocado

Ingredients
  • 12oz Bag vegetable Rabiatore pasta
  • 16 cups water ( for pasta water)
  • ½ teaspoon Olive oil
  • ½ Tablespoon Salt
  • ---For Vegies----
  • 2 Tablespoon Olive oil
  • 4 medium size Zucchini chopped
  • 1 8oz box Mushrooms
  • ½ teaspoon dried oregano
  • 1 clove garlic crushed
  • 1 medium onion chopped
  • 10oz Cherry tomatoes sliced in half
  • ¾ cup Parmesan cheese
  • ---Vinaigrette----
  • 3 Tablespoon Olive oil
  • 1 Tablespoons Balsamic vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Salt
  • 1 teaspoon Honey
  • ---Toppings---
  • 3 Tablespoons fresh basil
  • 1 cup Feta Cheese
  • 2 Avocado sliced
Instructions
