One thing I truly love is potatoes, and these have it all going on!!!  These roasted potatoes are crunchy on the outside and moist and tender on the inside. This recipe has only six ingredients.  I will be severing these alongside my Lemon Roast Chicken for our family Easter Dinner. I bake them at the same time with the chicken.

Pre-heat oven to 350°

Now for the step-by-step picture instructions. 

Roasted Potatoes

Wash and peel the potatoes and cut them into quarters. Chop the rosemary, thyme, and sage.

  • Bring water to boil in a medium size stock pot
  • Be careful adding the quarter potatoes to the boiling waterRoasted Potatoes
  • Cook for 5 minutes             
  • Remove potatoes with a slotted spoon
  • Add potatoes to baking pans
  • Let potatoes cool for 10 minutes
  • With the prongs of a fork, scrape all sides of the potatoes

  • This makes the potatoes crunchy on the outside and tender in the center.

Divide the olive oil between both pans of potatoes.

Ingredients
  • 8 med size Potatoes
  • Water for boiling potatoes
  • ½ cup Olive oil
  • 2 Tablespoons rosemary, thyme, and sage
  • 1 teaspoon salt ( plus extra salt for sprinkling on cooked potatoes.)
Instructions
  1. Peel and wash potatoes and cut into quarters
  2. Wash and chop rosemary, thyme, and sage
  3. in a medium size, saucepan fill with water and bring to a boil
  4. With a slotted spoon add potatoes to boiling water
  5. Cook potatoes for 5 minutes.
  6. Remove with a slotted spoon and let cool for 10 minutes.
  7. Place in a baking pan and with the prongs of a fork scrape all sides of quartered potatoes
  8. Divide the olive oil between both pans of potatoes
  9. Evenly distribute the rosemary, thyme, sage and salt
  10. Bake in a Pre-heated oven at 350° for 1 hour and 45 minutes or until golden brown
